Hi My Friends! I hope you are doing great and you have had a lovely weekend. Today’s post is about a really simple soup recipe!
I love soups. They are easy to make, full of vitamins and they are warm! In that time of year, especially in North of Europe, it’s crucial for me to get my shot of energy, and for that I like to cook with seasonal ingredients. And the fennels are great because they are available from May to December.
I love cooking fennel because of its particular aniseed perfume, so even if we are at the end of Summer (I know summer is supposed to last until the 21st of September but where I live the feeling is autumnal and back to school, gahh…!!) I somehow feel I am still on Holidays.
Here is the list of ingredients:
- 3 fennels,
- 2 little potatoes,
- 1 onion,
- Some fennel seeds,
- Salt & pepper.
And the instructions !
Cut the fennels like so together with the onion and the potatoes. Don’t forget to have a tissue next to you because the onion will make you cry…!
Put 5 table spoons of olive oil in a big pot and start cooking, after a minute add the slides of the onion and let them cook until they are golden. Then add the fennels and the potatoes and mix well for 5 minutes.
Put some salt, pepper and 3 table soup of fennel seeds. Mix well for 3 minutes.
Add 2 liters of water, cover and cook over 20 minutes until it starts boiling. Once it is boiled, let it cook over low heat for 20 to 30 minutes.
Then mix it well and serve!
