Hello! In today’s post I’m going to show you an end of summer recipe so to speak, very easy to cook, perfect for that time of the year to get a lot of energy due to the properties of the ingredients. For that you will need:
- 2 Eggplants,
- some cherry tomatoes (as much as you want)
- 1 red pepper,
- 1 mozzarella,
- 1 pre-made pastry (pâte brisée in French)
Eggplants provide antioxidants, manganese and copper which are essential against the dammages caused by free radicals. Copper is necessary for the production of hemoglobin and collagen (a protein used to structure and repair tissue) in the body.
When they are boiled these vegetables are rich in vitamins B1 and B6 which are both coenzyme that are necessary for the production of energy basically. Vitamine B6 is also necessary for the immun system.
Cherry tomatoes are full of water, fibers and vitamin C (I explained all the benefits of vitamin C in this blogpost).
And red pepper is an excellent antioxidant and is rich in vitamin C and A.
Vitamin A is one of the most versatile vitamins, participating in many functions of the body. Among other things, it promotes the growth of bones and teeth, keeps the skin healthy and protects against infections.

So here is how to proceed:
Cut all the vegetables:
Put them in a pan with olive oil, add salt, pepper and Provence herbs and let the melange cook for 15minutes:
Prick the pastry with a fork in several places, add the melange and the slices of mozzarella:
Put in the oven for 30 minutes at 180°:
