Hello My Dears ! I hope you are doing very well. Here is a recipe inspired from the food blog of BBC I guess, as it is named bbcgoodfood.com, on this vegan lemon cake recipe.
This recipe is full of good ingredients, and believe it or not, while I was on a diet to loose some weight, I was making that cake to have a moment of self-indulgence.
Here here is the list of ingredient:
- 100 ml of coconut oil,
- 160 grammes of flour,
- 120 grammes of powder almond,
- 150 grammes of sugar,
- 1 sachet of baking powder,
- 1 lemon,
- 3 old bananas.
I will tell you more about the recipe but before I do that I just want to tell you why, in my opinion, I think what is called bad fats are important during a diet. For the record, I’ve lost 6 kilos in 3 months and also I am not a nutritionist ! (I’m an accountant but not a certified dietician).
As I was saying, during my diet, I noticed that from time to time a little piece of sweetness was needed, and to me it was essential to know what was inside, and the best way to do it was to cook!
Why do I think fats are essential for the body?
According to the website lanutrition.fr: “Lipids (or Fats) are the most energy-rich macronutrients in the diet. They are essential for our daily activities and when we consume more than necessary, they are stored in the fat cells. But their role is not only energetic. Lipids are very important for the health because they constitute the structure of the membranes of our cells and thus condition their good functioning and also the organs to which they belong.”
However there are two categories of fats: the good ones and the bad ones.
According to the website fedecardio.org (which is the French federation of cardiologie) and also my research, the good fats include: polyunsaturated fatty acids (Omega-6 and Omega-3) and monounsaturated fatty acids (Omega-9). Basically they are find in food like salmon, olive oil, avocado, nuts, etc…
The bad fats are saturated lipids, which are find in coconuts oil for instance, but they are essential in our diet and are harmful only if they are consumed in big quantities. Coconut oil is one of them and it is recognized as healthy (again in reasonable quantity) because of its protective effects on the arteries and heart, particularly through its metabolism process: the body immediately uses the fat reserves, without storing them!
Our body is a fantastic machinery that needs everything in moderation. Balance is key.
So here is the recipe:
- Heat oven to 180°C,
- Put a bit of oil in the tin,
- Mix the flour, the baking powder, the almond powder, the sugar and lemon zest in a bowl.
- Make a hole in the mixture and add the oil, lemon juice and 170ml cold water, then mix until smooth.
- After that add, the bananas you would have smashed before with a fork,
- Pour the mixture into the tin.
- Bake for 30 mins or until a skewer comes out clean.
- Cool in the tin for 10 mins, then remove and transfer the cake to a wire rack to cool fully.
